
The commercial season for rockfish (also known as striped bass) is open, so now is the time to look for this fabulous fish at area eateries and in local seafood markets.

Horseradish-crusted Wild Virginia Rockfish
Ingredients
1/3 cup Greek yogurt
2 tablespoons horseradish
1 tablespoon bread crumbs
½ teaspoon minced garlic
1 anchovy fillet (optional)
1 pinch white pepper
4 rockfish fillets (6 ounces each)
Flour
Method
Blend yogurt, horseradish, bread crumbs, garlic, anchovy and pepper in food processor. Dredge rockfish in flour then coat with horseradish mixture. Bake in 350 degree oven for 9 to 12 minutes until fish flakes easily with a fork. Serves 4.
