RECIPE |Tzatziki Greek Fries

WVEC TV-13 meteorologist Tim Pandajis joined us on January 4 to share his long-range winter fork-cast [LINK]. And although warmer weather is on the radar, Tim says Mother Nature has a way of correcting herself. When the cold temperatures do hit, you’ll want to make his recipe for Tzatziki Greek Fries, a comfort food dish that is a nod to his Greek heritage.

INGREDIENTS

    • 4-5 large red skinned potatoes, cut into wedges
    • 6 tablespoons olive oil
    • 5 cloves garlic, finely minced
    • 3 tablespoons finely chopped parsley
    • 3 tablespoons fresh oregano
    • 1/2 cup crumbled Feta
    • 1/2 cup prepared tzatziki
  • Kosher salt and freshly cracked black pepper

METHOD

Preheat oven to 450F.

Place the potato wedges, 3 tablespoons of olive oil and salt and pepper in a zip top bag and shake to combine. Transfer the potatoes to a baking sheet lined with foil, parchment or Silpat and evenly spread out the wedges. Transfer to the oven and bake for 30-35 minutes, flipping once, until evenly baked and golden brown.

Whisk remaining olive oil, chopped garlic, parsley and oregano in a large bowl. Add the mixture to the hot fries and toss to combine. Taste and season with extra salt and pepper as needed. Arrange on a platter. Sprinkle with feta and dollops of tzatziki and serve alongside lemon wedges. Adjust salt as needed.
